Ingredients

Potato masala

  • 2 Medium potatoes
  • 1 Green chilli, finely chopped
  • 1 tsp Chaat masala
  • ¼ tsp Salt
  • 2 tbsp Coriander leaves, chopped

Sandwich

  • 4 Slices of white bread
  • 2 tbsp Butter, soft
  • 4 tbsp Green chutney
  • ½ Small onion, in thin rings
  • 1 Small tomato, sliced
  • ½ Cucumber, sliced

Method

  1. Cook the potatoes. Prick the potatoes with a fork and microwave on high for 6 to 8 minutes, turning once, until soft. Or boil them for 15 minutes. Peel once cool enough to touch.
  2. Make the filling. Mash the potatoes with the green chilli, half the chaat masala, the salt and coriander. It can be made a day ahead and kept in the fridge.
  3. Build. Butter one side of each slice. Spread chutney on the unbuttered side of all four. Pat potato onto two slices, layer on onion, tomato and cucumber, sprinkle the rest of the chaat masala and close with the other slices, buttered side out.
  4. Toast. Toast in a frying pan over medium-low heat, pressing down with a spatula, for 2 to 3 minutes a side until deep golden. Cut and eat hot with ketchup.

Tips

Medium-low heat lets the filling warm through before the bread burns. A heavy pan or a pot of water on top works as a sandwich press.
